Thai Mini Shrimp Lettuce Wraps

These bite-size shrimp lettuce wraps are easy to prepare and perfect as an appetizer or finger food parties while also providing a burst of Thai flavors in every bite.

Ingredients

sushi rice
shallot
fresno chile
lime
cocktail peanut
romaine lettuce leaves
gulf shrimp
fish sauce
fresh mint
kosher salt
blackpepper
sugar
vegetable oil

Instructions

1. Take shrimp and cut each part into 2/3rd. season it with salt and blackpepper.

2. Take lettuce. chop off the bad end and seperate the leaves.

3. Thinly slice half of the fresno chile. remove its stems and seeds.

4. Take out juice of a lime and keep it aside.

5. In a bowl, combine fish sauce, 2 tbsp lime juice, 2 tbsp warm water and 1 tbsp sugar. stir to dissolve the sugar.

6. In a pan, add 1 tbsp oil. add 3 oz shallots, the sliced fresno chile and saute until shallots are softened and golden brown for about 3 minutes.

7. Add the shrimp and cook for 1 minute. next we add some fish sauce and continue to cook until the sauce is slightly reduced and shrimps are firm and cooked through.

8. Line shallow bowls with lettuce leaves. add a spoonful of rice on top of lettuce followed by cooked shrimp and the sauce prepared above from lime, sugar and fish sauce.

9. Garnish with cocktail peanuts and fresh mint.

10. Thai shrimp lettuce wraps are ready to serve.
