Pumpkin and carrots are two veggies which blends well and are great source of vitamin A. By using these two ingredients I have made a luscious soup which has mild hint of pepper and turmeric.
To add the crunch I have added melon & sunflower seeds along with fried shavings of carrot & pumpkin
It’s a power packed healthy soup which has all the nutritional value which your body demands.
Instructions
1. In a pan take 2 tbsp of olive oil, add 4-5 garlic cloves. sauté for 1 minute.
2. Now add 1 cup chopped pumpkin and 1/2 cup carrots.
3. Add seasoning of salt to taste, pepper to taste and turmeric powder.
4. Cook this for some time. add 1/2 cup water and let it cook for 10 minutes.
5. Now blend the mix to a fine purée. taste and check for seasoning.
6. Now plate your soup in a bowl and garnish it with mix nuts and coconut cream.
