1. To make one omelette, break 3 eggs in a bowl. add 2-3 tbsp chopped onion, 2-3 tbsp tomato chopped, 2 chopped green chillies, 1/4 tsp turmeric powder, 1/2 tsp red chilli powder, salt to taste, 2 tsp chopped coriander leaves and whisk for 1 minute till well combined.
2. Heat 1 tsp butter and 1 tsp oil in a non-stick pan. add the egg mixture. scramble lightly to make the omelette light and fluffy. cook on medium heat for 3-4 minutes.
3. Gently scrape the sides and fold the omelette in half . continue to cook for 1 minute. take the pan off the heat.
4. Gently slide the omelette on a serving plate and serve hot with toasted brown bread.
