Nicest nice cream ever! This vegan low cal Mango Nice Cream is all you’ll want this summer. If mango and ice cream had a baby it’d be this one! And if this doesn’t make you go ummmmm with every bite, I’ll give you your money back! (jk I’m broke!)

It’s got 5 ingredients and is unbelievably easy to make. If you want to replace coconut cream (please don’t, it’s easily available) you could just add fresh cream but results won’t be the same.

Instructions
1. Blitz 1/2 cup soaked cashews with 400 ml coconut cream.
2. Add 3 cups chopped mangoes, 1/2 cup powdered sugar and 3 tbsp lemon juice. blitz to a smooth consistency.
3. Add to aluminium containers. freeze overnight. serve chilled.
