Kothimbir vadi is a delicious savory crisp snack from the Maharashtrian cuisine made with gram flour (besan), coriander leaves, peanut, sesame seeds and spices. These savory, herby and flavorful bites can be pan-fried or deep-fried. They are a popular tea-time fritter snack loaded with coriander leaves (cilantro).
Instructions
1. Chop two cup of coriander leaves.
2. In it add ginger- garlic -chili paste
3. Now add spices like coriander powder, chili powder, cumin power and pinch of asafoetida
4. Now add coarsely ground peanut powder and 1 tbsn sesame seeds
5. Now add 1 cup gram flour with along with 1/2 tblsp on sugar and salt as per taste
6. Mix everything and add water ultil it becomes thick batter
7. Transfer the batter in a greased pan and steam it for 10-12 min
8. Once done cut in to pieces and pan fry with oil, untill golden. vadi is ready to be served
