1. Take 2 bitter gourd / karela without scraping and cut slantwise.

2. Put them in a bowl and add 2 tbsp salt, 2 tbsp sugar. mix well and rub the salt and sugar till it starts dissolving.

3. Leave it for 15-20 minutes to completely dissolve sugar to cut down the bitterness.

4. Take a bowl and put 1 cup gram flour / besan, 1/2 cup rice flour, 1 tsp ajwain / carom seeds, 1/2 tsp turmeric powder, 1/4 tsp red chilli powder, little salt (optional).

5. Add water to make a smooth batter. mix well and rest for 15 minutes because rice flour will absorb water. then re-adjust the batter consistency by adding water. while resting the gram flour to get swollen texture by absorbing water. by mixing the batter again and again ,you can avoid sodium bicarbonate.

6. After resting, if you need to adjust batter consistency then add little water and mix well.

7. Squeezed the seasoned bittergourd to remove excess water and put into the gram flour batter.

8. Now put in hot oil one by one and fry till half done and strain. now repeat second batch till half fry.

9. Again heat the oil and put all half fry pakodas till golden brown in colour. strain and spread on tissue paper to absorb oil.

10. Sprinkle around 1 tsp chaat masala, 1 tsp red chilli powder and 1 tsp dry mango powder. mix well. serve in a serving plate.
