Instructions
1. Heat 2 tbsp oil in a skillet, add 50 gms diced onions, 60 gms diced capsicum and mix it well.
2. Then, add 270 gms halved mushrooms and mix it well. cook for 7-10 minutes on medium heat or until it turns golden brown in color. remove it from heat and keep aside.
3. Take a pan, dry roast 1 tbsp coriander seeds, 1 tsp cumin seeds, 3 cloves, 2 green cardamom, 1/4 tsp black peppercorns, 1 inch cinnamon stick, 3 dry red chillies, 1 bay leaf and roast until it turns golden brown in color. remove it from heat and transfer this into a blender and blend it into a fine powder.
4. Heat 2 tbsp oil in a skillet, add 1 tsp cumin seeds, 1 tbsp ginger garlic paste and stir well.
5. Then, add 170 gms chopped onions and fry till translucent or until it turns golden brown in color.
6. Now, add 270 gms tomato puree and mix it well. cook for 5-7 minutes on medium heat.
7. Add 1/2 tsp turmeric powder and stir well.
8. Then, add the blended masala, 1 tsp salt, 1/2 tsp red chilli powder and mix it well. cook for 3-5 minutes on medium heat.
9. Add 2 tbsp fresh cream and mix it well. now, add the cooked veggies in it and mix it well. cook for 5-7 minutes on medium heat.
10. Add 250 ml water and mix it well. bring it to a boil.
11. Add 1 tsp dry fenugreek leaves and mix it well. cook for another 3-5 minutes on medium heat. remove it from heat.
12. Garnish with coriander leaves. serve hot.
