1. For each omelette break 2 eggs into a bowl, add 1 small chopped onion, 1 chopped garlic clove, 1 chopped green chilli, 1/2 tsp turmeric powder, salt to taste, 1 tsp cumin powder and 1 tbsp spinach paste and whisk till all the ingredients are well incorporated.
2. Heat 2 tsp oil in a non-stick pan, pour the egg mixture, cook for 2-3 minutes or till the underside is cooked.
3. Fold. similarly make the rest of the omelettes.
4. Serve hot with 2 slices of bread cut into triangles.
