Green Papaya Chicken

Instructions
1. In a heavy bottomed pan add 2 tbsp oil.
2. Add the tempering ingredients – 1 tsp whole cumin, 2. bay leaves, 2 dry red chilli, 2 green cardamom and 1 inch cinnamon and saute till a nice aroma comes out.
3. Add 1 finely chopped onions and cook till translucent.
4. Add 1.5 tsp ginger garlic paste and cook till the raw smell goes away.
5. Add 250 gms of minced chicken and cook for sometime.
6. Add 900 gms of grated green papaya, cover with a lid and cook on a low flame till soft.
7. Once it's cooked add the green chillies paste, and cook for another 2-3 mins.
8. Add 1 tsp ghee and 1/2 tsp garam masala powder.
9. Turn the flame off and cover with a lid till all the flavours are nicely incorporated.
10. Serve with hot rice or roti with gondhoraj lemon.
