A Konkani style mixed vegetable gravy. Konkani Festival meals mainly include this mixed vegetable gravy. Be it on Krishna Janmashtami or Ganesh chathurthi,  gajbaje is one of the 'main curry' item found on the banana leaf.
You will be tired looking for each vegetable in the gravy …Why am I exaggerating??..  because we use minimum of 11 veggies in this curry…


1. Cook all the vegetables in boiling water. firstly add the hard vegetables which take more time to cook and then add the vegetables that take less time to cook. together this may take about 15 minutes.

2. Make a masala paste with grated coconut, roasted red chillies, tamarind and salt.

3. Add the masala paste into a vessel and boil it. then add all the cooked vegetables and cook them together for 3 minutes.

4. Switch off the flame and add a tempering made separately of oil, mustard seeds, curry leaves.
