1. Take 1.5 cups gram flour in a large bowl. add 1/2 cup whole wheat flour, 2 tbsp semolina, 1/2 tsp dry fenugreek leaves, 1/4 tsp turmeric powder, 1 tsp red chilli powder, 1/4 tsp garam masala powder, 1/2 tsp cumin powder, 1/2 tsp coriander powder, 1/2 tsp amchur powder, salt to taste, 1 tsp sugar, a large pinch of crushed black peppercorns, 2 tbsp white sesame seeds, 2 tsp oil and 1/2 cup water. knead to a stiff dough. cover and set the dough aside for 5 minutes.
2. Take a portion of the dough and roll into a long and thin log of 1/2 inch diameter, sprinkle white sesame seeds and roll again. cut into 1 inch pieces and shape into cylinders.
3. Heat sufficient oil in a kadai, slide in a few dough cylinders and deep fry till golden brown and crisp. drain on absorbent paper and arrange on a serving plate.
4. Serve with hot tea.
