Caesar Chicken Salad With Pasta
1. In a large skillet heat 1 tbsp extra virgin olive oil. add 2 chicken breasts and season with 1 tsp italian seasoning, 1 tsp garlic powder and kosher salt to taste. cook until golden on both sides and cooked through, 6 to 8 minutes per side. set aside to rest, then slice into bite-sized pieces.
2. In a large bowl, combine chicken with 1 lb of cooked penne pasta, 2 cups chopped romaine lettuce, 1 cup halved cherry tomatoes, 1/2 cup grated parmesan cheese and 1/2 cup croutons.
3. In a medium bowl, combine 2/3 cup caesar dressing with juice of 1/2 lemon and 1 tbsp chopped parsley. season with salt and black pepper powder to taste . pour over the pasta salad mixture and stir to combine. serve.
