Instructions
1. Take a pan, add 35 grams peanuts and roast for 3 – 5 minutes on medium heat or until it turns golden brown in color.
2. Remove it from heat and transfer this into a mortar.
3. Crush them with the help of a pestle. keep aside.
4. Take 180 grams okra and cut its sides.
5. Cut it from center and slice okra lengthwise. (see video)
6. Heat 1 tablespoon oil in a pan, add the okra in it and mix it well.
7. Cook for 8 – 10 minutes on medium heat.
8. Remove it from heat and keep aside.
9. Heat 1 tablespoon oil in a another pan, add 1/2 teaspoon cumin, 12 – 15 curry leaves, 2 dry red chili and stir for 1 – 2 minutes.
10. Then, add the semi cooked okra in it and mix it well.
11. Cook for 5 – 7 minutes on medium heat.
12. Add 1/2 teaspoon red chili, 1/4 teaspoon turmeric, 1/2 teaspoon salt, 1/2 teaspoon dry mango powder and mix it well.
13. Now, add the crushed peanuts in it and mix it again.
14. Cook for another 3 – 5 minutes on medium heat.
15. Remove it from heat.
16. Serve hot.
