This Andhra style okra recipe is a tasteful twist to the normal okra curry. The prrparation of this dish in itself is a uniue process, okra is cooked in a tamarind based stew and an blend of Indian and authentic spices to achieve the perfect consistency, color and flavor. It tastes great with both rice and roti.

1. Heat oil in a pan. add whole red chillies, mustard seeds.

2. When mustard seeds crackle, add fenugreek seeds, green chillies, garlic, curry leaves, turmeric powder, hing and toss for a half a minute till the flavors come out.

3. Add onions, okra (cut them into 1 inch size), salt, sauté them and add chilli powder, coriander powder, cumin powder, tamarind juice, water. mix them and put the lid on and cook for 10 minutes in a slow flame till okra is tender.

4.. Add jaggery, mix it well and garnish with coriander leaves. put the lid on, let it rest for 15 minutes. serve this with rice.
