Tomato Halwa (with Jaggery)

For those who love a bit sour and sweet taste, this is going to be awesome!! I guess it's best tasted while hot just like carrot halwa. I put them in moulds so that I can get those solid pieces

Instructions

1. Wash and blanch the tomatoes with water. i. e. boil the tomatoes in water and once it is cooled, peel the skin of the tomatoes.

2. Make a tomato puree of it in a mixer and keep aside.

3. With the cornflour, make a paste with 3/4 cup of water.

4. Heat a kadai, add 2 tbsp ghee and roast cut cashew nuts. take them out and keep aside.

5. Retain the ghee in the kadai and add the tomato puree.  cook for about 4 min. we have to cover the lid while cooking as it might splash out.

6. Next add jaggery powder to the cooked mixture and stir well.

7. Add cardamom powder as well and stir.

8. Finally add corn flour slurry and roasted cashew nut pieces and stir for 2 min.

9. The mixture starts binding together to form a glossy halwa leaving the sides of the pan. add 1 tbsp of ghee  and mix well to finish it off.

10. You may eat this halwa directly as soon as u remove from heat .

11. I put them into greased moulds and let it set for 3 hours.
