Ridge Gourd Chutney/ Heerekai Chutney

This is a healthy and tasty chutney made by using the ridge gourd pulp, green chilly coconut and tempered with methi and mustard seeds . This goes well with rasam rice, or plain hot rice.

Instructions

1. Heat a pan add 1 tbsp oil, once hot add the chopped ridge gourd, slit green chilly, tamarind, coriander leaves, saute it and cook it.

2. Once the ridge gourd is cooked turn off the flame and let it cool.

3. Once it cools down add salt and grind it into a coarse to smooth paste(chutney).

4. Heat a small pan add oil and add mustard seeds once it pops add methi and hing, let the color of the methi change, now turn off flame and pour the seasoning to the chutney.
