1. Heat a pan with 1 teaspoon oil, 1 tablespoon ghee, 3 to 4 green cardamoms, 2 bay leaves, 1 inch cinnamon stick, 1 teaspoon cumin seeds and let them splutter.
2. Then add 2 finely chopped onions and sauté for about 2 to 3 minutes. next add 1.5 tablespoons of ginger garlic paste and sauté for 3 to 4 minutes.
3. Further add three finely chopped tomatoes, salt to taste, two green chilies and cook for about 3 to 4 minutes.
4. Then add two teaspoons red chilli powder, half teaspoon turmeric powder, 1 tablespoon coriander powder, 1 teaspoon garam masala powder and cook for about 1 to 2 minutes.
5. Next add 750 grams mutton and stir it well with the masala.
6. Further add 2 cups of water and stir it well and adjust salt to taste. cover the lid and cook for about 3 to 4 whistles.
7. Once the pressure releases open and transfer it in a serving bowl. garnish it with the coriander sprig and serve it hot.
