It’s an authentic kashmiri delicacy which is a quick and easy recipe. This semi gravy side dish goes really well with rice and roti. It has a beautiful aromatic flavour of dry ginger, fennel, cardamom & cinnamon. This curry tastes amazing when cooked in mustard oil.


1. Firstly take small brinjals and make 2 slit lengthwise.

2. Heat oil in pan and deep fry brinjals on medium flame and keep aside.

3.Take 2 tbsp of mustard oil, add cardamom, cinnamon, black pepper & garlic. cook for about 2 minutes.

4. Add chilli powder, turmeric powder, fennel powder and ginger powder. mix for 1 minute and then add water.

5. Now add tamrind pulp with fried brinjals. cover and simmer for 5 minutes.

6. Garnish with freshly chopped coriander leaves.
