A great way to use up any leftover mushrooms in your refrigerator. Serve it as is for a wholesome meal or wrap it in roti, paratha, tortillas

Instructions

1. In a pan, heat 1 tbsp oil, 1 small chopped onion, 2-3 chopped mushrooms. saute for a minute.

2. Add salt and black pepper powder to taste. mix and transfer in a bowl. set aside.

3. To the bowl with mushrooms, add 2 tbsp (30 gms) dr oetkar funfoods veg mayonnaise garlic, few chopped coriander leaves. mix well.

4. Break 2 eggs in a bowl. add salt and black pepper powder to taste. beat and whisk until frothy.

5. Heat a pan with 1 tsp butter. pour the beaten eggs in heated pan and cook until lower side is set. flip and cook from the other side as well.

6. Place the mushroom mayo stuffing on one side and fold the other side on top of it. garnish with chopped parsley. serve and enjoy!
