Try this Parsi version of scrambled eggs with fried onions, ginger, loads of chilli and black pepper, usually served with pav or bread. A simple breakfast dish, but with a Parsi twist. Delicious!

Instructions

1. Heat oil in a non-stick pan. add onion and green chillies and sauté till onion turns golden.

2. Add tomato and sauté for 1 minute. add 1 tablespoon coriander leaves and sauté for 30 seconds.

3. Add turmeric powder, chilli powder and cumin powder, mix well and sauté for 1 minute.

4. Beat eggs in a bowl, add to pan along with salt and mix lightly for 1 minute. add butter and remaining coriander leaves and mix well.

5. Cut bread toasts into triangles.

6. Garnish with a coriander sprig and serve hot with toast triangles.
