A popular dish from the Mughlai cuisine- Paya curry is a simple and quick one pot recipe made by adding onion, ginger-garlic paste, aromatic whole spices. It is best enjoyed with plain rice and can also be served with hot and fresh paranthas.

Instructions

1. For this recipe, we need 4 pieces of goat trotters. you can use lamb trotters as well. these are directly burned in the fire to remove hairs and then brushed with water.

2. Now, these are cut into pieces and washed with warm water neatly. we need 4 pieces of medium size onions. chop these roughly in thick slices.

3. Put trotters in a pressure cooker. add chopped onions, add 2-3 green chilies, one teaspoon of turmeric powder, one tablespoon of coriander powder, half tablespoon of cumin powder, half teaspoon of garam masala powder, salt as per taste, a pinch of ginger powder, red chili powder as per your taste and a cup of water. mix well.

4. Pressure cook it at low medium flame until 10-12 whistles. let's check what is inside. stir well and scrape the masala from the bottom. keep this aside let's prepare the next step.

5. Heat up 4-5 tablespoons of mustard oil in a hot pan. add approx one inch of cinnamon stick, a piece of black cardamom, 4-5 pieces of cloves, 4-5 pieces of peppercorns, 2 pieces of green cardamom, a pinch of mace, half tablespoon of cumin seeds, give it a stir and fry for few seconds until these become in dark color.

6. Add 2 tablespoons of ginger garlic paste, stir and fry for 2 minutes at low flame. add a tablespoon of kashmiri chili powder for nice red color gravy. add little water to avoid it from burning. mix well and cook for another 2 minutes.

7. Add pressure cooked trotters. mix well and cook for 2-3 minutes at medium flame. cover the lid and cook for 4-5 minutes at low flame. our masala is cooked and all the flavors are mixed. add approx 300 ml of water, mix well.

8. Increase the flame until a boil. cover the lid and cook for 10 more minutes at the lowest heat. and switch off the burner. after resting for half an hour let's have a look at our paya curry. the color of gravy looks amazing if you allow it to rest for half an hour to one hour. let's serve it.

9. This paya curry tastes amazing with pieces of bread. try it with your favorite one. garnish it with coriander leaves.
