Dum Pusht Gosht is a lip-smacking side serve in which succulent mutton chunks coated with a spicy and tangy curd marinade are slowly cooked for a smooth textyre and rich taste. Serve it hot with roti or naan and raita and you will fall in love.

1. In a pan heat 3 tablespoons clarified butter. to this, add 4 cloves, 3 cardamom, 2 cinnamom sticks, 1/2 teaspoon cumin seeds, 1/2 teaspoon black peppercorns. fry them for 10 seconds.

2. Now add 2 tablespoons ginger garlic paste and fry till raw smell disappears.

3. Add 1/2 kilo mutton and 1 teaspoon salt, fry it well till colour of mutton changes.

4. Now add 2 teaspoon red chilli powder, 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon cumin powder, 1/2 teaspoon black pepper powder. roast them well add little water if required.

5. Now add fried onions of 3 medium sized onions, 2 tablespoons yogurt and 2 green chillies, mix well.

6. Add a glass of water and cook till mutton is tender.

7. When mutton is tender and water is completely dried then add tomato paste of two tomatoes

And cook for 10 minutes. then add 1 tablespoon dried fenugreek leaves and

Juice of half a lemon.

8. Mix well and cook for a minute and tasty bhuna gosht is ready.

9. Serve it hot with roti or phulka
