Egg Lababdar is an unique one pot dish cooked in the tomato-onion and cashews creamy based gravy and aromatic Indian spices. It is wholesome, healthy and very tasty option for a side serve and can be enoyed with both steamed rice and phulkas.
Recipe by:


1. Cook the rice it till it’s 90% done. strain it & spread the rice on a plate to cool.

2. Chop the beans & carrots and finely chop the garlic cloves.

3. Separate the spring onion greens from the white. now finely chop both separately & set them aside.

4. Take a big kadhai or wok & heat 1 tbsp of peanut oil. now break 3 eggs side by side and sprinkle salt & pepper. also sprinkle some of the green spring onions/ scallions.

5. Now gently fold it in & scramble the eggs lightly. remove the eggs onto a plate & set aside.

6. Add one more tablespoon of peanut oil & heat it.

7. Add the white portion of the spring onions & sauté for a minute. now add the finely chopped garlic & sauté.

8. Add the carrots, sauté for a minute & then add the sliced beans. continue to mix & sauté for a minute or two .

9. Add in the rice & mix it well. now add the soy sauce & mix it uniformly.

10. Add the green portion of the spring onions & mix again.

11. Lastly add the scrambled eggs & sauté for few minutes. remove & serve hot.
