Egg fried rice is an interesting variation of Egg biryani. Fried rice has to it an authentic Chineese touch while boiled eggs and aromatic Indian spices enrich the flavors and make this recipe a must-try for everyone.

1. Boil 2 cups water. add all ingredients listed under make paste.

2. Boil for 8-10 minutes. switch off the flame and remove water.

3. Cool the ingredients. peel off the skin of tomatoes. roughly chop them and add to the grinder.

4. Add all other ingredients to grinder and grind all to the smooth paste. use water if required. keep this paste aside.

5. Cut half 5 boiled eggs and keep aside.

6. Heat oil in a pan. add bay leaf, cumin seeds, green cardamom, cloves and chopped onions. fry till onions turn soft.

7. Add above tomato paste. cook for 2-3 minutes.

8. Add turmeric, red chilli, kashmiri red chilli, coriander, garam masala powder and mix well.

9. Cook till oil leaves the pan. add water, sugar and salt. mix well.

10. Add boiled eggs and cover pan. cook for 8-10 minutes on low flame.

11. Remove lid and add kasuri methi, cream and grate white part of 1 egg. mix well with light hands.

12. Garnish with coriander leaves and serve and enjoy.
