Idiyappam/string hopper/nool puttu/chomai/indiappa is a rice noodle dish originating from the Indian states of Tamil Nadu and Kerala. It is made up of rice flour pressed as noodles, into a flat disc-like shape and then steamed. Traditionallly, it is done by soaking rice, which is then ground into a fine smooth paste and then stirred on low flame continuously till it forms a lump or thick dough. Since it is time consuming ,we can make with store bought rice powder.

Instructions

1. Boil water in a pan, add salt and oil.

2. Pour the boiled water little by little to the roasted rice flour, use spatula to mix initially since water is hot. then use your hands to form a smooth dough.

3.When the dough is little warm and easier to handle, form cylindrical shapes and stuff it into the greased murukku maker with idiyappam mould (small holes) shown in video.

4. Lightly grease the idiyappam stand or idli stand to prevent sticking.

5. Press the dough onto the idiyappm stand or idli plates in a circular motion.

6.Steam for 10-12 mins till done, allow it to cool for a while and carefully remove the idiappams to a serving plate using a spoon.

7.Serve hot with coconut milk and jaggery,stew, egg roast or veg kurma.
