Tender Coconut Pudding With Cherry Syrup

A pudding which perfectly captures the subtle but splendid flavour of tender coconut! Unlike the coconut milk pudding, this recipe uses the water as well.

Instructions

1. Take 1 1/2 teaspoon of agar agar powder add 4 tablespoon of water mix it well let it rest for 10 minutes.

2. Take 1/2 cup of tender coconut in a blender jar by adding little bit of coconut water or plain water make a smooth paste.

3. For coconut milk here i have used 1/2 cup grated coconut & 1/4 cup of water grind it well and squash out the fresh coconut milk.

4. Take a bowl, add 1/2 cup coconut paste, 1/2 cup fresh coconut milk, 1/4 cup fresh cream ( here i have used homemade cream).

5. In another bowl add 1/2 cup powdered sugar, add the agar agar liquid mixture, 1/2 cup water mix well and cook this mixture in low to medium flame by stirring continuously until the it turn out thick and transparent.

6. Now transfer the jelly mixture to coconut mixture (remember transfer the mixture when it’s hot)

7. Mix it well now transfer the mixture to desired shape.

8. Keep it in refrigerator at least for 3-4 hours once pudding is set serve it with cherry syrup or fruit of your choice.

9. Serving- 4 persons
