Sambar Powder, also known as Sambar Podi could be made up of varying spices. Most of these are coriander seeds, cumin seeds and lentils. Some regions also use coconut, cinamon and even stone flower. All of these are dry roasted in a pan along with curry leaves and dry red chillies and ground.

Instructions

1. Drt roast 1/2 cup coriander seeds till light brown in color. roast about 17 long dried red chilli, 2 tbsp chana dal, 1.5 tbsp of urad dal, 1.5 tbsp of cumin seeds (cumin seeds roast very fast, so be cautious & don't burn it),1 tbsp peppercorns, 1.5 tsp of fenugreek seeds, 1.5 tsp of mustard seeds, few curry leaves.

2. Now, turn off the stove & then add 1/2 tbsp of turmeric powder, 1/2 tbsp of asafoetida powder.

3. Let the roasted ingredients cool down completely.

4. Grind them into a fine powder. your sambar powder is ready. store in an airtight container. use as and when you need.
