Pineapple Kesari is a delicious delicacy from the South. Also called pineapple halwa, the creamy texture and rich taste comes from sooji, sugar, ghee and pineapple. It is a common dish from the tradational kitchens of Karnataka.

Instructions

1. Heat 2 tsp of ghee and fry cashews and rava until nice aroma leaves out. take it in a plate and keep aside until use.

2. Heat water in the same pan with chopped pineapple, yellow food colour, pinch of salt.

3. Let it come to a rolling boil for 5 minutes and then simmer and mash the pineapples.

4. Add roasted rava and keep stirring until the moisture is absorbed. close and cook for 2 minutes in simmer.

5. Open and add the sugar to it. stir until it dissolves and evenly mixes with rava. keep stirring until it thickens.

6. Add 2-3 tsp ghee in intervals while stirring until it leaves out the sides of the pan and combines well.
