1. Slice the mango into small cubes and keep it aside.
2. Take bowl add red chilli powder, mustard powder, fenugreek powder, garlic mashed, turmeric powder. mix this well and keep it aside.
3.Take pan heat oil and add mustard seeds, cumin seeds, red chillies, hing, garlic. once it is done, switch off the flame and add curry leaves. keep this tempering aside till it cools down.
4. Now take spices mixture and add the tempering into it and mix it well.
5. Now add cut mango cubes into it and mix it well again. keep this mixture aside for 24 hours.
