Fried Arbi is another very interesting variation of arbi ki sabzi. In this recipe, evenly chopped pieces of arbi are first fried till they ate golden brown and then cooked with spicy and tangy masalas. The soft and juicy arbi when mixed with a range of spices makes for a flavorful side serve with rotis, or dal-chawal.

Instructions

1. Wash and peel the arbi and boil it.

2. Once it cools down, take a plastic bag, overlap the arbi and press gently with your palm to flatten it.

3. Marinate it with all the spices namely coriander powder, red chilli powder, cumin powder, garam masala powder, amchur powder, turmeric powder, salt to taste and keep in a refrigerato for some time.

4. Apply marinate on both the sides of arbi. take refined flour in a plate.

5. Take corn starch in a bowl. add water in it to make a mixture of corn-starch and keep aside.

6. Dust refined flour on arbi, dip into corn starch mixture and then into bread crumbs coating the arbi evenly from all the sides.

7. Deep fry in hot oil till crisp and golden brown in colour.

8. Sprinkle some chat masala and serve hot.
