1. Heat a pan on medium flame and add oil. let the oil heat and add asafoetida, mustard seeds, cumin seeds and fry it for few seconds.
2. Add onions, green chilli and fry it for 3 to 4 minutes on medium flame.
3. After 3 to 4 minutes, the onion must have turned brown. then add ginger garlic paste. fry it for few seconds. fry the ginger garlic paste well. meanwhile, chop three medium tomatoes and keep aside.
4. Reduce the flame to low. add turmeric powder, red chilli powder, coriander powder and cumin powder, mix it well.
5. Now add tomatoes and mix it well. add salt according to taste, mix it well. cover it and cook it for 2 to 3 minutes on low flame.
6. Open the lid and stir it. now add one small teaspoon of jaggery and mix it well. cover the pan again and cook it for 4 to 5 minutes.
7. After five minutes open the lid and stir it. the sabji is almost ready so now we will add garam masala powder and mix it well. cover it and cook it for another minute.
8. After a minute open the lid and stir it. the sabji will be properly cooked and the tomatoes must have turned mushy. add coriander leaves and mix it well and turn off the gas.
9. Cover it and leave it for a minute and after a minute take it out in a serving plate.
Serve it with roti, chapati or parantha.
