1. In a mixing bowl, add ragi flour, rice flour, sooji, curd and water( as needed). mix well and rest the batter for 15 minutes.
2. Now add the veggies, grated coconut, cumin, ginger, curry leaves, coriander leaves, chillies, salt and eno. mix everything properly. adjust the consistency.
3. Now grease the appe pan, add some mustard seeds in each cavity. pour in the batter, close the lid and let them cook from both the sides.
4. Serve hot with coconut chutney and sambar.
