This recipe celebrates the coming together of two most loved breakfast items- oats and scrambled eggs. It is a protein-packed dish prepared by whisking together all the ingredients to an omlette consistency with authentic Indian spices and herbs. The mix is then cooked to perfection for the creamy texture.

Instructions

1. In a pan, add 1 cup of oats and roast it for three minutes.

2. Add 1 tablespoon olive oil & 1 tablespoon butter in a separate kadai.

3. Add half teaspoon mustard seeds and let them splutter. also add few curry leaves & one small onion finely chopped. let this sauté for sometime.

4. Further add 1/4 cup green beans, 1/4 cup carrots and sauté them as well.

5. Add salt as per taste. now to this add the roasted oats and give it a good stir.

6. Add around half cup of water and mix all of this together. also add salt as required.

7. Cover the lid and let it cook for sometime. keep checking and stirring the mixture.

8. Now keep the entire mixture on one side of the kadai and add two eggs to the other side. scramble the eggs well and then mix it with the entire oat mixture cover the lid again and let it cook for sometime.

9. Finally, add two pinches of pepper powder and few coriander leaves on top for garnishing.
