1. Heat oil in a non-stick pan. add cumin seeds and once they start to change the colour, add potatoes and sauté for a minute.
2. Add turmeric powder, salt, tata sampann red chilli powder and mix well. cover and cook for 6-8 minutes or till the potatoes are ¾ cooked.
3. Add bhindi and dried mango powder and toss well. cover and cook for 8-10 minutes. add coriander leaves and mix well.
4. Garnish with coriander leaves and serve hot with rotis.
