1. Heat oil in a pan. add cumin seeds and sauté till brown.
2. Add chopped ginger and green chilli, mix well and sauté for 30 seconds.
3. Add carrot cubes, salt to taste, mix well and sauté for 6-7 minutes.
4. Add methi / fenugreek leaves, mix well and saute for 3-4 minutes.
5. Add turmeric powder, red chilli powder, garam masala and coriander powder, mix well and sauté for 3-4 minute.
6. Add lemon juice, chopped coriander leaves and mix well.
7. Remove in serving bowl and serve hot with paratha.
