Tamarind chutney, popularly known as Imli ki chutney is a sour and sweet iIndian condiment made with select tamarind, jaggery powder and authentic Indian spices. This dish is an integra part of Indian chaat and can also be served as a sauce or dip otherwise.

Instructions

1. Take tamarind into a cooker pot.

2. Add jaggery, water, red chilli powder, cumin powder, chat masala, and rock salt. you can use dates if you want.

3. Transfer the pot into cooker and cook on medium heat until 1 whistle.

4. Take the pot out and mash everything well with masher.

5. When the mixture thickens up, strain it through a strainer into a bowl.

6. You can use the pulp as it is now.

7. Transfer the pulp that is left behind in the strainer into a bowl.

8. Add a little water and mash it well again.

9. Again strain the pulp through strainer into the previous pulp.

10. Chutney is all ready.

11. You can add water in this and use for panipuri or use as it is to add on bhel.
