A Punjabi-style recipe of Bharwan karela with bitter notes from the bitter gourd balanced by the sweetness of the caramelized onions

Instructions

1. In a pan, dry roast coriander seeds, cumin seeds, fennel seeds, kalonji seeds, fenugreek seeds. cool the ingredients and transfer them to a mixer jar.

2. Add the spice powders namely amchur / dry mango powder, chilli powder, turmeric powder, asafoetida powder to the mixer and grind it to a fine powder.

3. Remove the seeds of the bitter gourd, rub salt all over the bitter gourd. let it sit for 20 minutes.

4. Heat a pan with some mustard oil, add finely chopped onions, ginger garlic paste and saute well.

5. Add the masala powder and saute them well. keep the stuffing aside to cool.

6. Wash the bitter gourd a couple of times, this step is to remove the bitterness.

7. Stuff the bitter gourd with the stuffing and tie it with a twine.

8. Heat a pan with some oil, fry the bitter gourd till they turn brown in color.

9. Finally, sprinkle some of the ground masala powder on top of it and turn off the stove. serve them hot with rice or roti.
