Though I have never been to Jaisalmer but I am a big fan of Rajasthani food. This curd base kala chana gravy is to die for, tanginess from curd makes it mazedaar. Do try this version of chana.

Instructions

1. Soak 2 cups of black chickpeas / kala chana overnight. give chana atleast 7-8 whistles in 4 cups of water. keep it aside.

2.In a bowl add 1 cup whisked curd, 1/2 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp red chilli powder, 1 tbsp garam masala powder, 1/2 tsp cumin powder. add 2 tbsp besan / gram flour. mix everything well.

3. Add a cup of kala chana water (water in which kala chana is boiled) to the curd mixture and mix. keep it aside.

4. Heat a pan with 2 tbsp ghee. add few dried red chillies, 1 inch cinnamon stick, 6 cloves, 1 tsp cumin seeds / jeera, 1 tsp hing / asafoetida. saute it for a minute.

5. Add few curry leaves, minced ginger garlic paste and saute it for another minute. now add 1 chopped onion. cook it for 4-5 minutes.

6. Now add curd mixture and kala chana with the remaining water. bring it to boil and add salt as per taste. simmer it for 10 minutes on low flame.

7. Garnish it with chopped coriander leaves and serve hot.
