1. Squeeze 1 grated cucumber between your palms over the sink to remove excess moisture.
2. Transfer the squeezed cucumber to a serving bowl.
3. Add 1 cup plain greek / hung yogurt, 1 tsp extra virgin olive oil, 1 tbsp chopped fresh dill, 1/2 tsp lemon juice, 1 clove minced garlic, salt to taste in a bowl, and stir to blend.
4. Have it with pita bread or as a healthy dip with crackers.
