A famous Gujarati delicacy these baked lentil muffins are perfect tea time snack or a meal in itself.

Instructions

1. Soak 1/2 cup moong daal and 1 cup rice in water and grind it in a smooth paste.

2. In it add the shredded veggies of your choice like carrot, corn, coriander leaves, bottle gourd , ginger, lemon juice and 1/2 cup curd. mix everything and add salt to taste, turmeric powder.

3. In a pan prepare the tempering with oil, sesame seeds and curry leaves.

4. Add eno fruit salt / baking powder in the mixture and pour it in baking tray and top with tempering.

5. Bake for 20-25 minutes untill a golden crust is formed it top.

Notes

This recipe makes 6 muffins.
