A steamed savory cake; which is prepared with, moong dal, yogurt, and spinach. It is a protein rich, light and a healthy.

Instructions

1. Heat up 1 tsp oil in a pan and add 3-4 chopped garlic cloves, chopped green chillies to taste. mix well and add 3 cups spinach leaves. you can boil the spinach leaves if you want. mix well and cook for just 3-4 minutes. turn off the gas.

2. Transfer everything into a blender jar and blend it into puree. when it is almost pureed, add 2 ice cubes and blend again. you can use ice cold water in place of ice cubes.

3. Take 1 cup rava / semolina / sooji, 1/4 cup curd in a bowl and mix well. add 1/2 cup palak puree and mix well.

4. Also add 1/2 cup water and mix well. add salt to taste, some more water (approx. 1/4 cup) and mix well. cover and rest the batter for at least 15-20 minutes.

5. Add 1/2 tsp eno fruit salt, 1 tsp water and mix in quickly.

6. Grease the idli molds well with oil. add the batter into the molds and stack the molds on the idli stand.

7. Heat up about 1 inch water at the base of the idli cooker and transfer the idly stand into it.

8 Close the lid and steam the idli's on medium heat for 20 minutes. turn off the gas and let the idli's be in the cooker for another 5 minutes.

9. Open the lid and take the idli stand out. let it cool down for about 5-10 minutes and take the idli's out with the help of spoon or knife.

10. Palak idli is all ready.

Notes

You can make 12 idlies from 1 cup suji.
