Cajun spice has a beautiful rustic and aromatic flavour of it own.


1. To make cajun spice mix, in a bowl add together garlic powder, black pepper powder, cayenne powder, onion powder, paprika, oregano and thyme.

2. First, marinate the fish with salt and lemon juice for 15 minutes.

3. Then do second marination with cajun spice mix and leave it aside for 30 minutes. mix well.

4. Now take a pan. put some oil and pan fry the fish pieces. fry it for 3 to 4 minutes on each side till it gets crispy. set aside.

5. Take oil in a wok, add ginger and garlic paste. put flame on low.

6. After 2-3 minutes, add grated tomatoes and mix well.

7. When oil starts to separate add cajun mix and salt to taste.

8. When tomatoes are fully cooked, add water and check it’s consistency.

9. Before serving, temper it with ghee and curry leaves. serve hot!
