Rich, moist and cinnamony, this old-fashioned cake recipe is a perfect way to use up a few carrots and an apple!!

Instructions

1. In a bowl, take 1 grated apple, 3-4 grated carrots and juice of 1 lemon. mix all of them. now add 1 tsp vanilla essence and whisk again.

2. Add 3 eggs one by one. i.e. take the 1st egg and whisk it, then add second egg and whisk it and finally add the third egg and whisk it.

3. Now add 3/4 cup refined flour / maida, 1 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon powder and 3/4 cup brown sugar one by one and fold the whole batter nicely.

4. Take a cake mould, grease it slightly with butter and pour the batter into it.

5. Bake the cake for 20-25 minutes at 180°c.

Tips

1. You can use any sugar (brown sugar, palm sugar, coconut sugar or caster sugar).

2. This recipe serves 4 to 5.
