Use healthy vegetables such as cabbage, cauliflower, potatoes, mushrooms, etc with some spices to make Veg Manchurian.

Instructions

For vegetable manchurian balls

1. Take all the veggies namely 1/2 cup riced / grated cauliflower, 1/2 cup grated cabbage, 1/2 cup chopped green pepper, 1/2 cup grated paneer, 1/3 cup chopped onion in a bowl along with 1/3 cup golden flax seeds meal, 1/2 tbsp hemp hearts (optional) , 1 small green chilli, salt to taste, and 2 tbsp psyllium husk / isabgol. give them a very good mix.

2. Make round balls out of this vegetable mixture. you wont need to add extra water.

3. Deep fry these balls in hot oil on a medium flame. ensure that you do not disturb these for first 30 seconds. keep stirring and fry until manchurian turn golden brown.

4. Repeat this process for all vegetable balls and keep them aside.

For vegetable manchurian sauce

5. Heat 1 tbsp oil in a pan, add 1/2 tbsp chopped ginger, 1/2 tbsp chopped garlic and saute for a minute.

6. Add 1/4 cup finely chopped onion, 1/4 cup chopped green pepper / capsicum and saute for a minute.

7. Add 2 tbsp soy sauce, 1 tbsp green chilli sauce and mix it well.

8. Now add 1 cup water and let it boil for 2-3 minutes.

To prepare vegetable manchurian

9. Add manchurian sauce on top of deep fried manchurian balls.

10. Garnish with chopped spring onion. serve hot.
