For crust
1. Crush 8 cinnamon graham crackers until finely ground into crumbs (in a ziplock bag with a rolling pin or in a food processor.) set aside.
For apple filling
2. Add 1 peeled and diced apple, 1/4 tsp cinnamon powder, 1 tbsp white sugar, 1.5 tbsp brown sugar, 1/4 cup water to a saucepan.
3. Cook on medium heat for about 8 minutes or until apples are tender. stir it often.
4. Remove from heat and set aside until ready to build parfait.
For cheesecake filling
5. To a bowl add 6 oz softened cream cheese, 3 tbsp sour cream, and beat with an electric hand mixer until smooth.
6. Add 1/2 cup powdered sugar, 1/2 tsp vanilla extract, 1/2 tsp lemon juice and mix together.
7. Fold in 5 tbsp whipped cream. set aside.
For parfait
8. Add 3 heaping tbsp crushed cinnamon graham crackers to a 5 oz cup.
9. Then add 4 tbsp of cheesecake filling to the cup.
10. Add a thin layer of crushed graham crackers.
11. Next add a layer of caramel sauce.
12. Add 1/3 apple mixture to the top of the caramel sauce.
13. Garnish with whipped topping and sprinkles of crushed graham crackers.
