My focus during cooking is always to incorporate fresh produce and ingredients, be it veggies or fruits. Since, mandarins are in season , I planned to give them a quick make over. Sharing here a simple whole wheat mandarin cake recipe which goes well as your evening tea time snack.

Instructions

1. In a bowl, add 1 cup whole wheat flour, 1/4 tsp baking soda, 1/4 cup baking powder, 1/2 cup fresh mandarin juice, 1/2 cup powdered sugar, 1/4 cup vegetable oil, 1/2 tbsp mandarin zest.

2. Mix every thing well. make sure there are no lumps. add juice little by little for smooth batter.

3. Bake for 30 minutes at 180°c.
