A must-have on the Indian wedding menu and an all-time favorite winter sweet delicacy, Moong dal halwa has the right balance of flavors infused with dry fruits, saffron and sugar.

Instructions

1. Begin by soaking 1 cup moong dal / split yellow lentil in enough water for at least 3-4 hours.

2. Drain excess water and grind moong dal in a grinder to form a coarse paste.

3. Take a wok and add 1 cup ghee. allow the ghee to melt.

4. Now add 1 tbsp semolina / sooji, 1 tbsp gram flour / besan and mix well. roast well till they turn light brown.

5. Now slowly add ground moong dal and mix well till ghee gets completely mixed with dal.

6. To prepare sugar syrup in a pan, add 1 cup water along with 1 cup sugar and allow them to boil. add 3-4 strands of soaked saffron and 1/2 tsp cardamom powder. keep the syrup aside.

7. Keep mixing dal and ghee mixture till it starts changing color and gets crumbly. mixture should also start bubbling and change from yellow to brown texture. keep stirring to avoid getting burnt.

8. This process can easily take up to an hour till the mixture turns brown evenly.

9. Now, slowly add sugar syrup and cook on medium flame till all ghee is absorbed.

10. Now add 5 chopped almonds, 9-10 chopped cashews, 6-7 chopped pistachios.

11. Mix well and cook till all moisture has been absorbed and everything comes together.

12. Switch off the flame and transfer into a bowl.

13. Garnish with chopped pistachios. serve and enjoy.
