1. Preheat the oven to 200˚c.
2. Combine together 2.5 tbsp yeast, a pinch of castor sugar and 2 tbsp warm water and mix well. set aside to activate.
3. Sieve 4 cups maida / refined flour in a mixing bowl, add 2 tsp salt and whisk well. add the activated yeast and sufficient water and mix.
4. Fix the bowl in an electric mixer and mix well on slow speed. add little water and mix well to form a soft dough.
5. Stop the machine and add 1.5 tbsp olive oil and mix again in machine on medium speed.
6. Dust some flour on worktop, transfer dough and knead the dough slightly. shape into a roundel. grease a bowl with oil and place the dough in it and cover with a moist muslin cloth. set aside to prove for 5-10 minutes.
7. Knockback the dough and dust the worktop with flour. slightly knead the dough on it. divide the dough into equal portions.
8. Apply little oil on worktop, dust some flour on top and roll each portion into thin disc.
9. Grease a baking tray with oil and dust some flour and transfer the rolled discs on it. cover it with a moist muslin cloth and set aside 15-20 minutes in a warm place.
10. Transfer the tray in the preheated oven and bake for 8-10 minutes. remove and set aside to cool down.
11. Serve as required.
