Reminiscing this good old sponge cake recipe from my mom today. All the desserts in the world don’t match upto a simple, lightly sweetened home baked sponge cake, wouldn’t you agree? What’s your favorite mom’s recipe?

Instructions

1. Mix 1.5 cups of flour (cake flour or all purpose flour) and 1 tsp of baking powder. sieve them both together 2 or 3 times to mix thouroughly.

2. In 3/4 cup butter (100/120 grams) add 3/4 cup sugar and mix them together with an electric blender for 3-4 mins till its light and fluffy.

3. Take 3 eggs and 6 drops/ 1tsp of vanilla essence. beat them for 8-10 mins till thick and the batter dropped on top doesn’t sink in. beat the whites first and then add the yolk for the perfect fluffiness.

4. Start folding the flour in with the eggs in parts with a wooden spatula. the idea is to not mix vigorously so that air created inside doesn’t get released - which makes the cake spongy.

5. Add 1/4 cup/ 6-8 tbsp cold milk gradually to reach the right batter consistency.

6. Grease the pan with oil and some dry flour so that the cake doesn’t stick at the bottom. bake it for 35-40 mins at 350 degree fahrenheit.

7. Check with a toothpick at 30 mins to make sure it’s fully done otherwise bake for another minute or two. cool and enjoy the indulgence
