1. In a mixer grinder or a food processor, add 1 cup boiled chickpeas, 4-5 garlic cloves, 1 tbsp chopped parsley, 1/3 cup diced beetroot, 1 tbsp lemon juice, salt to taste, 1/4 tsp black pepper, 1 tbsp tahini sauce, 1 tbsp each of olive oil and reserved chickpea water in batches and grind it to a semi fine paste, make sure its thick and not runny.
2. Your healthy beetroot hummus is ready to be served, you can serve it with pita bread or veggies.
